Chilled food
Chilled food travels under controlled positive temperature without freezing, generally between 0°C and 8°C depending on the item.
Unlike frozen goods, there is no safety margin from a frozen mass here: any prolonged fluctuation shortens the shelf life that reaches the destination. Pre-cooling at origin is also decisive, because a refrigeration system holds temperature but does not correct cargo that was loaded warm.
